Bali’s award-winning MÉTIS Restaurant, Lounge & Gallery is famous for its exquisite haute French-Mediterranean cuisine, fine selection of wines and a gallery with the most impressive collection of contemporary and antique art. As one of the two men responsible for the exceptional tastes and textures behind the mouthwatering creations here, Executive Chef Dove Sudarsana has a lot on his plate. Since 2009, he works alongside celebrated restaurateur, Nicolas ‘Doudou’ Tourneville, and together, they continuously delight every discerning gourmand with their astounding culinary artistry, with signatures that place MÉTIS into an extraordinary league of its own.
With his long history at MÉTIS and prior training in French cuisines, Chef Dove brings not only his passion and creativity to the kitchen but also a wealth of experience to MÉTIS’ already stellar food and beverage menu which evolves according to current trends and customer demands while staying true to the essence of classic French-Mediterranean flavours. Just recently, a selection of new and refreshed menu has been released, two of which Chef Dove thoroughly recommends. Organic and nutritious, these new dishes are health conscious and vegetarian-friendly. Diners will be able to sample Executive Chef Dove Sudarsana’s passion, imagination and creativity through these meticulous creations; the Les Tagliatelles aux “Pistaches” – pistachio sauce and organic poached egg; and La Betterave – beetroot and goat cheese raviolis, cèpes mushroom and black truffle jus. Just like the rest of the items on the menu, these newcomers are impressively showcased, entertaining guests both visually and tastefully. Chef Dove also recommends the newest dessert on the menu, Le Colonel, an exclusive combination of homemade lime sorbet with mini bottle of ‘Beluga’ noble Russian vodka. According to Chef Dove, the restaurant is intent on its effort to promote clean and healthy eating. “We’re leaning towards newer and fresher menu selections. Diners today are looking for organic and vegetarian-friendly dishes, which we definitely support in line with our efforts in promoting healthy eating,” he said. When asked about what inspires him and the inspiration behind the creation of a new menu, Chef Dove says, “It just comes to me.”
An afternoon or evening at MÉTIS is always a pleasure, a treat for the senses for those who appreciate the beauty of art and nature with artistry of fine food and drink. It is the product of culinary visionaries Chef Nicholas “Doudou” Tourneville and Managing Director Said Alem. Open every day for lunch and dinner, the 350-seat MÉTIS Restaurant overlooks a spectacular Balinese garden while MÉTIS Lounge is a pulsating, quirky and sophisticated oasis perfect for soirées. Over the years, MÉTIS has developed a cool reputation for itself as an elegant sanctuary for connoisseurs and art lovers and MÉTIS Gallery is the epitome of this, with the finest pieces of Balinese traditional and contemporary art, handcrafted jewellery, object d’art, fashion, photographs and paintings from all over Asia.
